Ingredients

2 lbs boneless skinless chicken thighs

1 cup not just salad dressing

1 lemon (or lime if using Chili Lime dressing), halved

Lettuce, to serve
Directions
- Place the chicken in a medium bowl, and toss with Not Just Salad Dressing until fully coated. Let marinate for at least 10 minutes or up to overnight.
Thread the chicken on 10-inch metal skewers and place on the prepared sheet tray. Place the lemon halves, cut side up, next to the chicken.
To Broil: Broil 10 minutes per side, flipping halfway through, until internal temperature reads 165 degrees.
To Grill: Turn on half of your gas burners on medium-hight. Cover your grill & let it come up to temperature for 10 minutes. When the grill is ready, set the skewers directly over medium-high flames, or directly over prepared coals if using a charcoal grill. Cook covered for 8-10 minutes, flipping halfway through - until they reach an internal temp of 165 degrees. Transfer to a cutting board, and let the meat rest for 5 minutes.
Serve on a platter lined with lettuce and garnish with the charred lemon.
