To Broil: Broil 10 minutes per side, flipping halfway through, until internal temperature reads 165 degrees.
To Grill: Turn on half of your gas burners on medium-hight. Cover your grill & let it come up to temperature for 10 minutes. When the grill is ready, set the skewers directly over medium-high flames, or directly over prepared coals if using a charcoal grill. Cook covered for 8-10 minutes, flipping halfway through - until they reach an internal temp of 165 degrees. Transfer to a cutting board, and let the meat rest for 5 minutes.
