This is more of a suggestion, than recipe - but let us say we strongly suggest it, because it is DELICIOUS.
In the summer, this is a way to make the most of those exquisite fruits from the farmers market or garden, the rest of the year, we like Backyard Farms or other hothouse tomatoes. Be sure to keep them on the counter (not the fridge, where they get mealy) and season liberally with salt.
Labneh (strained plain yogurt) can be found at specialty markets and some grocery stores - a full-fat greek yogurt like FAGE can work well here.
Ingredients
-
2 thick slices of crusty bread, or pieces of naan
-
⅓ cup labneh
-
1 large heirloom tomato, or 6 small cluster tomatoes, sliced
-
2 tablespoons Chili Lime not just salad dressing
-
Silk Chili/ Aleppo Pepper to taste
-
flaky salt like (Maldon) to taste

Layer on the sliced tomato and season to taste with salt
Drizzle on Chili Lime not just salad dressing
