Cold Chicken Chili Lime Salad with Cucumbers and Sesame

Don't you dare turn on the oven! This recipes transforms a grocery store rotisserie chicken into satisfying cold salad you can scoop up with pita, put over rice, or wrap in a lettuce cup.

Ingredients

2 cups shredded cooked chicken

1 large cucumber, or 4 small Persian cucumbers, thinly sliced

4 scallions, thinly sliced

1 cup fresh basil leaves

1 cup fresh mint leaves

⅓ cup Chili Lime not just salad dressing, plus more to taste

2 tablespoons sesame seeds
Directions
Toss all ingredients except for the sesame seeds in a large bowl.
Transfer to a platter, drizzle with more Chili Lime Dressing, if desired, and top with sesame seeds.
