
Key Lime Pie Bites with Not Just Caramel

These mini key lime bites with Not Just Caramel require only 5 ingredients and come together very quickly. Not Just Caramel stand in for butter and sugar in both the crust and filling instead!
We love these cups because they’re portable, great for kids, and easy for entertaining. Simply make ahead, let set in the fridge for 2 hours, and serve!

Ingredients
1 cup finely grated graham cracker crumbs (about 8 crackers)

¼ cup Not Just Caramel, plus more to serve
1 (14 oz) can condensed milk
3 egg yolks
½ cup lime juice, plus the zest of 2 limes
Directions
Preheat the oven to 350 with a rack in the middle position. Line a 12 muffin tin with cupcake liners, mist with cooking spray, and set aside.
Pulse the graham crackers in a food processor or blender until the texture of sand. Pour into a medium bowl, add ¼ cup Not Just Caramel and mix with a fork until a coarse paste is formed. Place 1 tablespoon of the graham cracker caramel crust into the bottom of each muffin liner and press down with your fingers to form a firm bottom crust. Place into the oven for 8 minutes until the crust begins to set. Remove from the oven and let cool for 5 minutes.
Meanwhile, add the condensed milk, egg yolks, lime juice, zest of 1 lime, and 1 Tbsp Not Just Caramel to a large bowl and whisk until combined. Fill each muffin tin with the lime mixture and place back into the oven for 10 minutes until the filling has set. Let the muffins cool on a wire rack until they reach room temperature. Place into the fridge and let cool for 2 hours before serving. Drizzle with more caramel before serving if you like.
